Almond Flan

This luxurious flan is a caramel, creamy, sweet indulgence! The recipe is surprisingly simple and foolproof. If you love flan, you must try it! If you don't like flan, this may change your mind...


Prep Time: 15 minutes Yield: 6-8 servings


INGREDIENTS:

1/2 cup granulated sugar


1 14 ounce can of sweetened condensed milk (not evaporated milk)

1 cup whole milk

3 eggs

3 egg yolks

1 tsp vanilla bean paste or vanilla extract

1/4 tsp almond extract

dash of salt

1 cup slivered almonds


Set the oven to 350 degrees.


Make the caramel for the base of the pan:


Sprinkle the 1/2 cup granulated sugar in the bottom of a 9 inch cake pan. On stovetop, place pan directly over medium heat. Using an oven mitt, caramelize sugar by shaking pan occasionally until sugar melts and turns golden brown. Remove and set aside while you make the flan custard. The caramel may crack as it cools, this is normal. The caramelization process occurs as follows:







Combine remaining ingredients in container of a blender, processing at high speed for 15-20 seconds. Pour mixture over caramelized sugar. Cover pan with aluminum foil, and place in a large shallow pan. Pour in enough hot water to the depth of one inch into the larger pan. Bake for one hour, or until a knife inserted in the center comes out clean.


Remove pan from water and uncover. Let flan cool on wire rack for 30 minutes. Loosen edges with a knife. Invert flan onto a large plate.


Serve with whipped cream and optional fruit garnish. Store in the refrigerator.
