Crunchy Chicken Bites with Honey Peanut Dressing - Quick and Kid Friendly


Even picky eaters will love these crunchy chicken bites with a sweet honey peanut dressing. Serve the dressing as a dipping sauce, or serve the chicken with dressing tossed into greens, pasta, rice...


Prep Time: 20 minutes Yield: 4-6 servings


INGREDIENTS:


Oven Chicken Nuggets:


1 pound boneless, skinless chicken breasts, thoroughly dried and cut into 1 inch chunks

salt and white pepper, to taste

2 large eggs, beaten with a tsp of water

1 1/2 cups Panko bread crumbs


Heat oven to 425 degrees. Grease a sheet pan.


Salt and pepper chicken pieces. Dredge in beaten egg, then Panko bread crumbs.


Place on greased sheet pan and bake for approximately 20 minutes, until golden brown. While baking, prepare the dressing.


Honey Peanut Dressing:


1/4 cup smooth or chunky peanut butter

1/4 cup honey

3 tbsp soy sauce

2 tbsp rice wine vinegar

1 tsp lime juice

2 tbsp vegetable or olive oil

1 tbsp sesame oil

2 cloves garlic, minced, or 1/2 tsp garlic powder

1 tbsp fresh grated ginger, or 1/2 tsp ginger powder

1 tsp crushed red pepper flakes, or to taste

dash salt

sesame seeds for garnish, optional


Whisk all ingredients together until smooth.
