White Chocolate Buttercream Frosting


This buttercream frosting is delicious on any cake. I particularly like it with a dark chocolate cake. You can substitute milk or dark chocolate ganache for variations on this frosting.


Prep Time: 20 minutes Yield: 3 cups


INGREDIENTS:


1 cup unsalted butter, softened

1 cup semi soft white chocolate ganache (recipe follows)

1/4 tsp salt

1 tsp pure vanilla extract

1 tsp lemon juice

2-3 tbsp milk

4-6 cups of sifted confectioner sugar


In large mixing bowl, cream unsalted butter until light and fluffy. Mix in white chocolate ganache, beating until smooth. Add salt, vanilla, lemon juice and milk. Cream until smooth. Begin adding confectioner sugar, one cup at a time, until frosting is smooth.


WHITE CHOCOLATE GANACHE:


Heat 1 cup of heavy cream in the microwave until very hot, but not boiling. Remove, and add 1 cup of white chocolate chips. Let mixture sit a few minutes before stirring slowly to incorporate the milk into the chocolate until smooth. The ganache will last in the refrigerator for several weeks.
