Strawberry Butter


Using fruit jam, especially if fresh ripe fruit is not available, is a quick and easy way to make flavored butter, also known as compound butter. You can substitute any fruit jam for the strawberry jam in this recipe. A higher quality jam produces the best results. For a smooth and fluffy texture, be sure the jam and butter are at room temperature before mixing. This butter is a succulent treat on my Popovers.


Prep Time: 5 minutes Yield: 1 cup


INGREDIENTS:


1 stick (1/2 cup) unsalted butter, at room temperature

1/4 cup strawberry jam (or other fruit jam....try apricot!)

3-4 tablespoons powdered sugar, sifted

1/4 teaspoon salt (or to taste)

1/4 teaspoon lemon zest (optional)


With a stand or hand mixer, whip the butter for one minute, until smooth and creamy. Mix in the jam. Add the powdered sugar and salt, mixing well. Stir in the lemon zest.
